I start with an American Harvest standard Terryaki jerky mix.
I add about a 1/2 cup of warm water and mix the cure and seasoings from the package together.

about a 1/3 cup of Kethup,
a 1/3 cup of Thai Chili sauce,
3 TBsp brown sugar,
2 TBsp of molasses.
1/4 tsp of ground black pepper
(Optional 1 tsp of crushed dry red pepper flakes, and 1 tsp of Liquid Smoke)
Mix well.
Marinate moose strips for an hour or two, then place on dehydrator racks and dry until you reach desired texture.
